HACCP
To ensure a safe and consistent product we have implemented a HACCP program in our Federally Inspected plant.

Our "Critical Control Points" are:
  • Fresh meat received must be less than 4 degrees C and must contain no sporulating nor non-sporulating bacteria, no pesticides, drug or antibiotic residue, hormones, heavy metals, bone particles or foreign materials.
    This ensures "quality"

  • Marinade must contain EXACT ingredient portions as specified on our batch control sheet.
    This delivers "consistency in taste"

  • Cooking must be for the registered required amount of time and temperature.
    This locks in flavor and delivers "great steak taste"

  • Final water activity in cooked product must be .85 or less.
    This ensures a "shelf stable" product
